Grain Free Tabbouleh
- 3 heads of parsley finely chopped (no stems)
- 2-3 large tomatoes, diced
- 2-3 stalks of green onion, sliced
- juice from 1 lemon
- 3 tablespoons olive oil
- dash of pepper and salt
add all ingredients to a large salad or mixing bowl
mix up and chill in fridge for 30 minutes
I always transfer the Tabbouleh to a smaller glass tupperware, it keeps better.
