Grain Free Tabbouleh

  • 3 heads of parsley finely chopped (no stems)
  • 2-3 large tomatoes, diced
  • 2-3 stalks of green onion, sliced
  • juice from 1 lemon
  • 3 tablespoons olive oil
  • dash of pepper and salt
Directions:
add all ingredients to a large salad or mixing bowl
mix up and chill in fridge for 30 minutes
Enjoy!!
I always transfer the Tabbouleh to a smaller glass tupperware, it keeps better.
