Throwback Thursday: Paleo Meatloaf


Hello Everyone. Today is my favorite day of the week, Throwback Thursday. As a kid, I always looked forward to making meatloaf with my grandma. I loved mixing the mushy, weird, cold meat with my fingers. K…Now looking back that sounds weird… Gma made the best meatloaf. She is 95 years old and doesn’t do much cooking anymore but I want to keep the tradition alive. I can’t eat her version because the recipe calls for Saltine crackers. Instead, I am using a little bit of coconut flour and almond meal. Everything else is pretty much the same. Today I used turkey and pork sausage for the meat. But you could use beef and even ground chicken if you wanted.Paleo Turkey Pork Meatloaf:

Ingredients:

  • 1 lb Ground Pork Sausage
  • 2 lb Ground Turkey
  • 1/4 cup almond meal
  • 1 tbs coconut flour
  • 1/4 cup paleo ketchup— (Steves Paleo Ketchup)
  • 1 tbs mustard
  • 1 tbs Worcestershire
  • 1 tbs organic no salt seasoning from costco (kirkland)
  • 1/2 chopped jalepeno
  • 1 garlic clove
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 tsp chili flakes
  • 1 egg

Directions:

  1. Preheat oven to 350 degrees
  2. mix all ingredients together and place into a loaf pan
  3. Bake for about 45 minutes
  4. Take out of the oven and top with ketchup
  5. cook for an additional 10 minutes raising the temperature to 360 degrees
  6. Usa a meat thermometer to make sure meat has cooked to an internal temperature of 165
